CHIC EATS: Kale Yeah Chicken Salad [RECIPE]

Lunch On Fleek: Kale Yeah Chicken Salad
May be able to skip that afternoon snack once you try this week’s lunch recipe sis. Protein helps keep you full longer so layer this Cranberry, Apple and Walnut Chicken Salad over some Baby Kale (also packed with protein) and enjoy this easy to make meal.
This yumminess is held together with Greek yogurt instead of mayo (more protein) and the walnuts add a nice nutty twist (more protein). Balanced this out with some diced apples and dried cranberries and get ready to have a party in your mouth. This recipe makes enough for two so maybe add some whole wheat bread for a super well balanced sandwich on day two. Kale yeah!

Cranberry, Apple and Walnut Chicken Salad
Ingredients:
1 cup of baby kale (this tender version is super delicious raw)
1 cup of cooked diced chicken breast
1/2 cup of diced apple (I used a Gala apple)
3 tablespoons dried cranberries
2 tablespoons finely chopped red onion
2 tablespoons chopped walnuts
3 tablespoons plain nonfat Greek yogurt
1 teaspoon Dijon mustard
salt and pepper to taste
Directions:
This will literally take you 2 mins. Toss all the ingredients in a medium bowl and layer half of the mixture over the baby kale leaves. See – told you it was easy. Have a juicy orange as dessert and pow, that’s lunch beauties.
